Cracklin’ Skillet Bread

Yields1 Serving

 2 cups cornmeal
 3 tsp baking powder
 1 tsp baking soda
 1 cup sifted flour
 3 tbsp sugar
 1 ½ tsp salt


Stir together 2 beaten eggs and 1 cup of buttermilk, add 1⁄4 cup of the bacon drippings.


Add liquid ingredients to dry ingredients all at once. Add crumbled back. Mix well, then pour into hot skillet.


Bake 20-25 minutes or until golden brown in 450 degree oven. Cut into wedges and serve hot. You may also use two well greased layer cake pans.
