Carrot Gold Cake

Cake Ingredients
 2 cups sifted flour
 ½ tsp baking soda
 2 tsp cinnamon
 1 ½ cups salad oil
 2 cups finely grated carrots
 ½ cup finely chopped nuts (8 oz)
 2 tsp baking powder
 1 tsp salt
 2 cups sugar
 4 eggs
 1 can crushed pineapple, drained
 1 cup of coconut, if desired
Cream Cheese Frosting Ingredients
 ½ cup butter
 2 cups confectioners sugar
 1 tbsp vanilla


Sift the flour, baking powder, baking soda, salt, and sugar together. Add sugar, oil, and eggs then
mix well. Blend in thoroughly the carrots, pineapple, nuts, and coconut. This will bake a large cake or
3 greased and flour 9 inch round larger tins.


Bake at 350 degrees for 35 minutes for layered cake.
When cake has cooled add Cream Cheese Frosting
